Lisa Goes Vegan: a day of healthy eating

Making healthy lifestyle choices can be tough when living a busy life in a city like Amsterdam. We’ve sat down with Lisa, an advocate of healthy living, from Lisa Goes Vegan. A blog that provides recipes, restaurant suggestions and everything else that makes it easy and simple to be healthy (and sociable) in a busy city. The blog has just been voted Best Vegan Blog of 2016 in the Netherlands and we’re excited to share a whole day's worth of recipes that pair perfectly with our cold-pressed juices.

Lisa’s ethos is about making plant-based eating easy, accessible and not scary! She herself was once a big meat eater, but from listening to her body and learning about nutrition, she feels more energized and happier being fueled by vegetables. “It’s not only about the animals”, she says regarding veganism, “it’s great for my health and for the planet! I feel positive, healthy and free”.

With that in mind, let’s check out these recipes packed with goodness and created by Lisa for her brand new cookbook- our tummies are rumbling already!

Smoothie Bowls: breakfast for champions

Kick-start your day with a colorful smoothie bowl of healthy energy. Best part? You can play Picasso with the toppings! The perfect smoothie bowl is flavorful and thick enough to eat with a spoon, to satisfy your breakfast cravings. Lisa recommends, that for the perfect smoothie texture and taste, freeze your fruit of choice the night before and use a ratio of 40%-60% vegetable to fruit in a strong blender.

Recipe (for two bowls)

Green: 2 frozen bananas, 125ml almond milk, 2 handfuls of spinach, 2 tablespoons of oats and a few mint leaves

Pink: 150g frozen raspberries, 2 mandarins, 1 cooked beetroot, 100ml soya yogurt, and 1-teaspoon cinnamon

Yellow: 1 mango (frozen pieces), 1 orange, ½ an avocado, ½ cm ginger, ½ teaspoon turmeric

Method: blend all ingredients in a strong blender, serve into a bowl and get creative with toppings like nuts, goji berries, chia seeds, muesli, raisins or fruit. It's breakfast go wild!

Roasted garlic cauliflower soup: lunch with a punch

If like Lisa, you find it hard to imagine the world without garlic, this soup is for you! Once roasted, garlic has this awesome caramelized taste that goes perfectly with the subtle flavors of cauliflower. This is a warming, healthy lunch option!

Recipe (for 4 people)

1 cauliflower (approx. 600g)

500ml water

1 bulb (roasted) garlic

1 vegetable stock cube (or use fresh veggie stock)

1 sweet potato

1 lemon

1 onion

100ml oat milk

1-tablespoon olive oil

1-tablespoon paprika

1-teaspoon cumin

1 teaspoon dried thyme

Pepper & salt to taste


Method: Grill in the oven the cauliflower garlic and sweet potato with the herbs and a little oil for about 20 min, until golden brown.

In a big saucepan, gently fry the onion and thyme. Next, add the 500ml water and stock cube, bring to simmer. Add to the saucepan the roasted vegetables and oat milk. Cook for 5-10 minutes.

With a staff mixer, blend into a smooth (ish) soup. Add lemon, salt, and pepper to taste.

Quinoa salad and no-quesodillas: viva la Mexico!

It’s impossible not to love Mexican flavors: smoky, barbecued, lime, coriander, and chili... sweet, fresh and spicy! These two recipes are super healthy and flavor-packed.

Perfect juice to pair it with? Try a light and refreshing Surf’s Up with the salad and to compliment the avocado in the quesadillas, pair it with a balanced sweet-savory Paleo Heaven.



Quinoa salad with lime dressing (for 2 people)

150g Quinoa

100g Edamame beans

1 Red pepper

1 Avocado

1 Mango

1 Can corn (or fresh)

2 Spring onions


Juice of 1 lime

1-tablespoon olive oil

1 bunch fresh coriander

½ chili

Salt and pepper

Method: cook the quinoa and edamame according to the packet. Cut the mango, avocado, pepper, coriander and spring onions. Cut the chili fine and mix the dressing. Toss all the ingredients together in a bowl; add salt and pepper to taste.


No Queso-dillas

2 Corn tortillas

1 Red onion

150g corn

2 ripe avocados

Juice of one lime

Chili/chili powder

Fresh coriander

Salt and pepper

Method: mash the avocado with the lime and chili, and smear on one-half of the corn tortilla. Sprinkle generously with the finely chopped red onion and coriander. Fold the tortilla, and place under a tostie machine for 2-3 minutes. Lekker!



The key to happiness might very well be found in filling our bodies with whole, healthy and delicious food. And if it isn’t, well, we will all have a flavorful journey regardless!
